![]() Cafe! ![]() Page #2 ![]() CARIBBEAN RICE made from Cauliflower Recipe provided by onlylowcarb.com 3/4 cup 2.5 net carbs Let's get started! Ingredients: 1 large cauliflower 1/2 cup diced plum tomato 1/2 cup chopped green onion 1/2 cup green bell pepper 1 tbsp. minced garlic 1/2 cup fresh parsley Good Olive Oil Sea Salt and Cracked Pepper Heat a large skillet to med high heat, add a little olive oil and cook the bell pepper til it's soft and remove from pan (set aside) Now coat the bottom of the skillet with olive oil and a little College Brand Chicken stock, add grated raw cauliflower and stir. Actually you are stir frying the cauliflower, now add remaining ingredients and stir fry about 9 minute until soft. Squeeze some fresh lime juice on top (1/4 teaspoon) You should play around with this recipe adding your favorite herbs, legumes, spices or have it plain Enjoy! ![]() LONE STAR LOW CARB PIMENTO CHEESE DIP /SPREAD BEST RECIPE OF THE WEEK! 2 TIME WINNER! Serves up well on a Hot Sunday afternoon with sliced cucumbers, celery & Original Flavor Andre's Crackers> 3 huge crackers= 4 net carbs 8 oz sharp cheddar cheese shredded (Cracker Barrel Cheese block - zero carbs) 8 oz white sharp cheddar cheese shredded (Cracker Barrel Cheese block- zero carbs) 6 oz Gruyere cheese shredded 1 cup Hellman's Mayo (zero carbs) 4 oz low carb cream cheese 2 jars of pimientos diced & drained 1/2 cup finely chopped green bell pepper 1/4 cup finely chopped vidalia onion 1 med/large jalepeno pepper, seeded, deveined and minced 1 tbsp worcestershire sauce 1/4 teaspoon paprika Sea Salt to taste In a large mixing bowl beat cream cheese until smoothe. Stir in other cheeses with a large spoon blend well. Add Hellman's Mayo, onion, and stir in pimiento, green pepper, jalepeno, Worcestershire sauce and paprika. Now Taste and add Sea Salt. This makes close to 6 cups. Devide into seperate bowls and add some smoked almonds, crispy bacon or any of your low carb favorites. Note: you may bake this for a bubbly hot and creamy cheese dip too. Low Carb Pimiento Cheese, I Luv this recipe in all it's glory, because Pimiento Cheese is the Cavier of the South! Luv ya - SIS ![]() COLD LC TUNA SHELLS Recipe provided by me! Serves 2 as an appetizer or 1 for lunch 4 small Boston Bibb leaves (the crunchier the better) a few pieces of shredded carrots 1 can Albacore Tuna in water sprinkle of extra virgin olive oil 1 tbsp Hellmanns Mayonnaise 1 tsp sour cream 1/2 cup thin sliced fresh cucumber Sea salt and fresh ground pepper to taste After rinsing the lettuce drain well on paper towel Open the canned tuna and rinse w/ water, drain well with tuna lid Place dry tuna in medium mixing bowl and break into chunks Add extra virgin olive oil, mayonnaise and sour cream and gently blend keeping the consistency chunky. Add Sea salt and fresh ground pepper (I use a lot of salt, but if you have salt restrictions,use more pepper) Take an ice cream scoop of tuna and place in shell, add shredded carrots, top with another piece of lettuce Serve with ice cold cucumber chips and a bottle of Tabasco on the side NOTE: you can substitute tuna for boiled shrimp or cooked chicken Entire recipe is only 4 net carbs! NEW ORLEANS CRACKED PEPPERCORN RANCH DRESSING & CRAB SALAD Recipe provided by 5 Texans (my family) Ingredients 2 Heads of Boston Bib Lettuce (washed and cut into medium size pieces) 1 bag of carrots Julienne cut(only use 6 pieces per salad) 2 radishes thinly sliced 1 plum tomato sliced in layers and then half mooned 10 pieces thinly sliced cucumber 2 boiled eggs (sliced) 3/4 pound fresh lump Crab meat(the real thing) 1/2 lemon Ken's Steak House Buttermilk Ranch Dressing 2 tbsp = 1 net carb 2 tbsp of cracked black peppercorns Place lettuce on 3 individual salad plates Scatter a few radishes on top of lettuce Place 1/4 pd of the crab meat down the center of the lettuce across the plate Place egg on the edge of each plate (devide equally) Place tomatoes around the crab (not touching) Squeeze a bit of fresh lemon over the crab meat Place cucumber slices together on the side of each plate Drizzle the dressing over the whole plate of salad Sprinkle cracked black peppercorns all over each salad Garnish with the Julienne carrots with all 6 pieces bunched and centered on plate. This salad is so good! It may seem long and descriptive but that does not mean it's difficult to make or that it takes a long time to prepare. Please enjoy this special recipe that's been in my family for generations! The only change is the Dressing it's not homemade, but this taste close to it and it's low carb! DREAMY CREAMY LC SHRIMP SALAD Recipe Provided by my visitor Sasha only 8 net carbs per serving Serves 4 salads Ingredients 1 pound cooked, peeled, and deveined medium size Shrimp 6 button mushrooms thinly sliced 6 small radishes thinly sliced 2 Tbsp of chopped fresh tarragon 1 Hass Avocado sliced into thin wedges 1/2 cup thinly sliced cucumber half mooned 1/4 cup sour cream 1/4 cup buttermilk 3/4 cup crispy bacon 1 large head Boston Bib Lettuce 2 heads endive sliced in a large bowl whisk together sour cream, buttermilk, and bacon. add the shrimp, lettuce, endive, mushrooms, cucumber, radishes, tarragon and toss. top with thin slices of avocado Salt and Pepper to taste Time to eat!! Thanks to my visitor Sasha, from Miami,Florida!! ![]() MIKE'S PERFECT LC Caesar SALAD Recipe provided by my husband Mike Serves 4 people Ingredients 1 head of organic romaine lettuce (very well washed and cut into med. size pieces) Place chopped lettuce in large salad bowl McCormick California Style Garlic Powder W Parsley = 0 nc Badia Adobo Seasoning = 0 nc Kraft Romano Shaky Cheese = 0 nc Ken's Steak House Creamy Caesar Dressing 2 tbsp = 1 net carb You may sub Walden Farms Caesar Dressing with 0 net carbs 1 tsp lime juice (or a good squeeze of fresh lime) Kathy's Crouton Kisses Sprinkle a good amount of Adobo seasoning onto the lettuce repeat the process with the Romano, Garlic Powder, Salt & pepper. Toss salad with hands (clean hands ) & repeat the same seasoning with 1 exception, omit the salt. Toss salad again. Now add the Caesar dressing & lime juice and toss (use about 4 tbsp). Place Salad in individual bowls. Place 4 of Kathy's LC Crouton Kisses ( = 1 net carb) on top of each salad and serve. I hope you like it, We have it almost every night! KATHY'S LOW CARB CROUTON KISSES Recipe provided by onlylowcarb.com My family and friends love Mike's salad and always ask for the LC Crouton Kisses! I am always making them and giving them to friends! Take 4 to 6 slices of Low Carb Bread and cut into home style size crouton squares and place in a zip lock baggie with 1 to 2 tbsp of extra Virgin Olive Oil, 1 tsp dry garlic, 2 tsp of parsley 1 tsp salt, 1 tsp white pepper, 1 tsp paprika Zip lock the bag and shake it really good, to coat all the croutons!! Pour 1/2 inch of regular Olive oil or Canola oil into a large frying pan and heat burner to med/high heat. When the oil heats up place the croutons in the pan. They cook fast so pay attention and turn them quickly to cook the other side. Do not stir, they should lay flat in the oil, and not layered. I use small metal tongs to flip each one. When lightly browned place on paper towels to drain off excess oil. Salt to taste! Note: you may use any spices you wish to coat your croutons. Freeze the left over's in individual serving size baggies for convenience. MIKE'S GARLICKY BROCCOLI Recipe provided by my husband, Mike Serves 2-4 people 1 1/2 pound fresh broccoli 3/4 stick of real butter 0 carbs 1 tbsp of minced garlic (Mike uses the already minced garlic (jar) in water not olive oil) Sea Salt and fresh cracked Peppercorns Wash the broccoli and trim off large leaves and cut the stalks off. Arrange flowerets in vegetable steamer over boiling water Cover broccoli and let steam for 5 mins. for crunch, or 10 mins. for bright green If you cook it longer it is soggy and pale in color(not a good thing) Transfer broccoli to a serving bowl and keep warm Melt the butter in small sauce pot over med heat with the garlic You will want to brown the butter just a little this also cooks the garlic Serve cooked broccoli on individual plates and pour desired butter sauce on broccoli Salt & Pepper to taste LC "MOCK" FRENCH FRIES Recipe provided by onlylowcarb.com 2 large jicama Canola cooking oil for frying Salt, pepper and your favorite dry seasonings Wash and peel the Jicama Slice vegetables into strips (like fries) Place in bowl and add seasoning to coat Have your frying pan ready at med high heat. Place the fries into the oil and cook until browned. Place on plate with paper towel to drain excess oil & salt and pepper to taste. Serve alone or with LC Ketchup or NC Mayo, YUM! There is a variety of ways to change the flavor of this simple dish because the cauliflower takes on the flavor of the seasoning you add to it. 1 large head of cauliflower (washed & cored) Heavy whipping Cream 1 stick of butter Sea Salt Cracked peppercorn Place cauliflower in a large pot of boiling water and bring back to boil. Boil slowly uncovered for 10 to 15 minutes. The cauliflower is done when when a knife pierces the stem easily. Place the cooked cauliflower in a colander to drain. Take a paper towel and pat it dry once the cauliflower is warm not steaming hot. Place the cauliflower back in the pot it was cooked in minus the water. Take a hand Potato masher and mash it until it is just a little lumpy(if you like the consistency runny use a food processor). Add as much butter as you desire (I use 1/2 stick or more depending on the size of the cauliflower). Then add 1/4 cup Heavy Whipping Cream. You can heat this dish up in the pot on your stove or place in a casserole dish and heat in the oven on 350° for about 10 to 20 minutes. You can get creative and add sour cream, bacon pieces, cheddar cheese cream cheese, cooked onion til browned, chives, garlic or whatever you decide. I like to reheat in the oven with either a few extra pats of butter or mix it with sour cream, garlic, salt and pepper or you can make a cheese sauce on your stove using 1/4 cup heavy whipping cream, 3 oz cream cheese and 1 cup cheddar. Do not mash the cauliflower to mashed potato consistency, but to a very lumpy consistency. Pour sauce over cauliflower and bake for 15 - 25 minutes in a 350°oven. It is reheated when the sauce is bubbling. Just get really creative with this incredible low carb vegetable. The results are worth the extra time! I have a pic of my dish. It's the lumpy consistency with the cheese sauce. Enjoy! CHICKEN & TORTILLA DUMPLINGS ![]() INGREDIENTS 1 Whole Chicken Cooked 2 extra large boxes College Inn 0 carb chicken broth 1 pack of Mama Lupes' low carb tortillas, cut into strips or squares 4 stalks celery, diced 1 purple onion, diced 2 Tbsp. real butter 4 oz. sour cream Sea Salt to taste Pull chicken off bones and discard the skin and throw away bones. Put chicken in large pot. Pour chicken broth over chicken meat and bring to a broil. Add celery and onions and lower heat to med. with lid on.Cook for 15-20 minutes or until celery and onion is soft. Remove lid and add strips of tortillas 1 piece at a time. Place lid back on pot and take down to simmer. After 5-10 min. stir in butter and sour cream. SOOOOOOOO........ GOOD! Note from Webmaster: This soup is unbelievably delicious and you will want to freeze single soup portions for work. I like to add a little fresh cilantro to my soup in the middle of cooking.
